I'm using DVBEPG and can only get from 1 to 3 hours programming depending on the channel. Is there any way to change settings to get the extended EPG broadcast on Echostar 7 @ 119 w ?

What EPG do you use? DD's internal EPG, or DVBEPG module?

I'm using DVBEPG module.
Go to channel 200 for 48 hours of EPG.

I tune to Headline News or HBO-E and just leave it there for a few minutes to get the extended EPG. There are a few other channels that carry the extended EPG, but I can't remember the others right now.

Channals do NOT carry EPG.
EPG is part of the transport stream (besides regular channels) on few dedicated transponders.
All you have to do to populate EPG is to tune to the proper transponder. That is, to tune to ANY of the channels on this transponder(s).
And it does not matter is it TV- or just Radio-channel, crypted or FTA.

Goto Lyngsat to find out which TPs carry EPG (search for EPG string in the channel list).
Then pick any of the channels resided on the same TP and tune to it.

Once in a while, provider shuffles channels between transponders.
If you don't get EPG anymore, verify EPG location with Lyngsat again.

for instance, TPs #18 and #19 on Sat-119, TP #21 on Sat-110 carry EPG.
